For those of you on the Candida diet/cleanse and need to stay Paleo, I present friendly muffins! The recipe calls for strawberries, but since one of my little rascals ate all of them, I improvised with blueberries. Overall texture was definitely different and not too sweet, but still cake-like and not dry. Paleo Mexican chicken chowder. My take on the recipe in the against all grain cookbook, since I didn’t have any tomatillo salsa and I had butternut squash lying around. I halved the sweet potatoes, used the other half quantity of butternut squash and three large carrots with the juice of one lime and 4c chicken bone broth and 2lbs of chicken thighs. Season with salt, garlic, and cook in the instapot for 15 minutes-take our the chicken, purée the veggies. Shred the chicken and remove bones,put chicken back in, add 2c spinach, and cook for 6 more minutes. This is the closest thing I’ve come to zeppoli’s yet and I was still able to stick to being on the Paleo nutrition plan. Prepare this mix as you would for making waffles! Deep fried in a mixture of avocado, olive, and coconut oils for taste and anti-inflammatory properties and to avoid the low smoke point of coconut oil. Light and crispy on the outside and soft and delicious on the inside. 27 second lever with my feet elevated against a chair (not on top). Sorry, I need a better camera angle to show you the whole picture. This was my fifth rep, so my arms and grip are shaking a bit, but I went up in form and endurance as last week, my feet weren't elevated and I only got a solid 25 seconds. Gotta love progress though! ๐๐Button
